Prior to opening Obscura in Shanghai, China, Tam and her spouse – co-founder and chef Simon Wong – embarked on a calendar year-lengthy journey to investigate the country’s various cuisines and areas. Impressed by their travels, the pair crafted a menu that celebrates China’s culinary heritage in a modern day context.
Obscura is set within just Shanghai’s 3-storey Tang Xiang Cultural Space, house to a personal selection of historical Chinese treasures. Embracing the Chinese traditions of meals, wine, tea and incense, Obscura offers exquisite interpretations of classic Chinese flavours.
Born in Hong Kong, Tam relocated with her relatives to Canada at age 10. Following graduating higher faculty, she pursued a diploma in engineering. Whilst at college, she uncovered a passion for cooking and dropped out of college to embark on a new gastronomic journey. Tam enrolled in the culinary plan at George Brown College or university in Toronto and eventually acquired a submit-graduate diploma in Italian delicacies.
Returning to Hong Kong in 2014, Tam started operating at the considerably-lauded Bo Innovation below the tutelage of acclaimed chef Alvin Leung. Two several years later, Leung appointed Tam and Wong as co-govt chefs to start Bo Shanghai at Five on the Bund, a sister restaurant to the Hong Kong outlet. Tam distinguished herself as the first female chef in Mainland China to receive a Michelin star when Bo Shanghai attained that position in 2018.
Accepting the honour of staying named Asia’s Finest Feminine Chef, Tam claims: “This award marks a big milestone in my job. I am humbled that several industry leaders who I admire have adopted my evolution in this industry. I hope to be ready to inspire some others to pursue their enthusiasm.”
