Cheesy Bacon Breakfast Casserole

This Amish Breakfast Casserole is one of the best breakfast casseroles we’ve ever eaten. Hash browns and cheese baked in creamy eggs. It is crazy good! We ate this for breakfast and had the leftovers for dinner the same night! This is also great a great recipe for overnight guests and holiday mornings. Whip up some biscuits and grits and you are set!

How to Make Amish Breakfast Casserole

This casserole is super easy to make with only a few simple ingredients. In a medium skillet, cook bacon until crispy. Drain on paper towels. Cook sausage in a skillet until no longer pink. Drain excess grease and set aside. 

In the bowl of a food processor or blender, add eggs, cottage cheese, garlic powder, salt, and pepper. Process until smooth. 

In a large mixing bowl, combine bacon, sausage, frozen shredded hashbrowns, sharp cheddar cheese, and swiss cheese. Stir in egg mixture. Toss to coat all ingredients. Spray a 9×13-inch baking dish with cooking spray. Pour hash brown mixture into the baking pan. Bake until set.

  • There is no need to thaw the shredded hash brown potatoes before adding them to the casserole.
  • I blend the eggs and cottage cheese together in a food processor until smooth. If you don’t have a food processor, you can use a blender or mix the eggs by hand with a whisk.
  • Feel free to add onions, green bell peppers, or mushrooms.
  • Can use any meat in this casserole that you prefer. I use a combination of bacon and sausage, but feel free to use all bacon or all sausage. Diced ham is also delicious.
    • I use Jimmy Dean sausage.
  • I use a combination of cheddar cheese and swiss cheese. You can use any cheese that you enjoy. Muenster, gouda, gruyere, white cheddar all work great.

  • 1 lb sliced bacon chopped
  • ½ lb sausage
  • 4 cups frozen shredded hash brown potatoes
  • ½ tsp garlic powder
  • 9 large eggs
  • cups small curd cottage cheese
  • 2 cups shredded Cheddar cheese
  • 2 cups shredded Swiss cheese
  • Preheat oven to 350ºF. Grease a 9×13-inch baking dish. Set aside.

  • Cook bacon and sausage in a large skillet until done. Drain fat.

  • Place eggs and cottage cheese in a food processor or blender. Blend until smooth.

  • In a large bowl, combine bacon, sausage, hash brown potatoes, egg mixture, cheddar cheese, and swiss cheese.
