Hong Kong is as busy as ever, and it feels as though we are nearly back to ‘normal’. Margo, the intimate brasserie-esque European restaurant, will be helmed by chef Mario Paecke, the former chef de cuisine of Somm and sous chef at two-Michelin-starred cafe Amber. Even though Kyle & Bain, Hong Kong’s initially Martini-centric bar, will be led by The Diplomat’s co-founder John Nugent.
Having inspiration from his European travels, chef Mario will be serving light bistro-style dishes that contain tilapia served with grilled peaches, chanterelle mushrooms and verbena-Champagne sauce on mashed potatoes, a contemporary just take on the preferred Berlin curry sausage dish of currywurst, and German meatball dish Königsberger Klopse which functions veal meatballs and Norwegian langoustine served with a creamy caper sauce.

On the restaurant’s mezzanine ground, Kyle & Bain pays homage to the record of Ice House Road by naming the bar immediately after Scottish engineers William Kyle and John Bain, who obtained the patent for Hong Kong’s 1st ice equipment in 1870 and established up the city’s initially ice plant at the identical site where the bar is now found. Nugent will be presenting signature Martini serves and colonial-influenced beverages.
