Prep the Ingredients for Your Chipotle Chicken Bowl!

The main part of your honey chipotle chicken bowl is obviously going to be the chipotle chicken! So, make sure you buy one pound of chicken breast and chop it up into small little pieces.

Next, you will want to prep the ingredients you’re going to cook your chicken in. You will start with three tablespoons of low-sodium soy sauce, three tablespoons of honey for that extra bit of sweetness, about a half a dime’s worth of lime juice, two tablespoons of chipotle sauce, and two tablespoons of avocado oil. Lastly, make sure to mince up three garlic cloves. Leave the avocado oil aside and mix up the rest of the ingredients in a bowl.

You will want to make sure your honey chipotle chicken bowl comes with some great toppings as well. For this recipe, you are going to use two cups of COOKED brown rice, one cup of sliced cherry tomatoes, one cup of sliced cucumbers, and two cups of chopped Romaine lettuce.

Make Your Own Chipotle Tahini Sauce

You could always purchase some store-bought chipotle tahini sauce, but trust us, making it fresh at home is going to be a game changer. Take three tablespoons of tahini, half a tablespoon of honey, one tablespoon of low-sodium soy sauce and mix with with water (use your best judgement for thickness). 

Building the Bowl

Set your heat to a medium-high flame and heat up your avocado oil. After it’s heated up a bit, place all your chicken breast bits onto the pan and brown them on both sides.

Once the chicken is nice and browned, turn the heat down to medium. If you had to cook it in batches, pour all the chicken back in. Now pour your bowl of soy sauce mixture into the pan with the chicken and cook it for about five to seven minutes. Make sure you stir the chicken every once in a while to ensure it gets coated evenly in the sauce.

Once that’s done, divide your chicken and toppings into four equal servings and add them into the bowls. Pour some of your homemade chipotle tahini on top and you are done! Your quick, tasty, honey chipotle chicken bowls are ready to enjoy!
