A new series of The Great British Bake Off is just around the corner and to get us in the mood, we’ve been making shortbread.
As always, the contestants will be tested on all baking disciplines from pastry and cakes to bread and biscuits as the Bake Off returns to our screens, rumoured to be in late September.
This scrumptious recipe is super simple to make and requires just three ingredients you’ve most likely already got at home.

You don’t need to be any good at baking to make them and they are great for children to make too. Plus there is a cheat option if you only want to make a single portion for yourself without gobbling up the whole batch.

Simple shortbread recipe (makes 8 fingers)
- 170g (1.5 cups or 6 oz) plain or all purpose flour
- 120g (1/2 cup or 4 oz) butter or margarine
- 60g (1/4 cup or 2 oz) any sugar + extra for dusting
In a large bowl mix all of the ingredients with a spoon until they resemble breadcrumbs, then use your hands to form a dough ball.
Line a baking tray with parchment then put the dough onto it, flattening it down with either your hands or a rolling pin.
Use your hands to form it into a rectangular shape (around 1 cm thick), score into eight fingers, pierce each finger three times with a fork and sprinkle over extra sugar.
Put the tray into the fridge for around 30 minutes.
Pre-heat your oven to 200 fan/ 425 Fahrenheit/ gas mark 7.
Remove the tray from the fridge then oven bake for around 20 minutes until slightly golden (check after 15 minutes and don’t let it go brown).
Leave to cool, sprinkle over more caster sugar and pull the slices apart.
Single-serve cheat version in 90 seconds
- 45g (1/3 cup or 1.5 oz) plain or all purpose flour
- 30g (1/8 cup or 1 oz) softened butter or margarine
- 15g (1 heaped tbsp) any sugar + extra for dusting
In a bowl mix all of the ingredients with a spoon until they resemble breadcrumbs, then use your hands to form a dough ball.
Flatten the dough into a thick rectangular shape, place onto a plate, pierce the top with a fork three times and microwave on high for 90 seconds.
The plate will be hot so be careful. Sprinkle over extra caster sugar.
Make it vegan – use dairy free margarine.
Make it gluten free – use gluten free flour.
Both ingredients are available in most UK supermarkets and online.
