Fire up your pellet grill and get the chicken out of the fridge. Today we’re going to make a Smoked Chicken Salad Sandwich that is going to be the star of your next spring or summer gathering!

Smoked Chicken Salad Sandwich Recipe

Sometimes I lament the end of fall and winter cooking, and all of the soups, stews, casseroles, and meat-and-potatoes meals that come along with it. Traditionally, those types of meals are my favorite, so when the weather turns warm and the sun starts shining, a tiny part of me is disappointed. Not my vitamin D levels, or my transparent skin. Not my eyeballs either who are so sensitive to sun come March and April that I basically live in sunglasses. But some part of me.

Then I remember how amazing summer bbq foods are, and specifically things like this smoked chicken salad. Pasta salads, potato salad, the best brats, smoked baked beans, my Blackstone sees the light of day again and all of the stir-fry, smash burgers, and big fat tomahawk steaks along with it.

Smoked Chicken Salad Sandwich FAQ

How do you store leftovers?

These are perfect for leftovers! Store them covered, in the fridge, for 3-4 days. Great recipe to make on the weekend for easy lunches during the week!

Can you use rotisserie chicken for this recipe?

Absolutely. If you want to hit the easy button and skip roasting a whole bird, this recipe works really well with any kind of shredded or cubed chicken. You’ll miss the smoked flavor, but it’ll still be delicious!

Can you use Miracle Whip in the Smoked Chicken Salad?

You sure can! It’ll impact the flavor, significantly, but if you really love the Whip I’m not going to shame you for it. 😉

Are there any other mix-ins you can add?

YESSSSS! A lot of people like to add halved grapes and walnuts to their chicken salad. Give it a try sometime!
